1. Fire Cheeseburgers

These special spicy cheeseburgers are the perfect way to get your barbecue off with a bang.

Make sure you choose the highest quality ground beef with a high-fat content so that the burgers stay juicy and delicious after cooking.

Choose medium hot chilies because the flavors will intensify as the burgers grill.

Preparation Time: 15 minutes

Ingredients:

  • 2 lb of ground beef
  • 1 white onion
  • 2 red chilies
  • 10 slices of Monterey Jack Cheese
  • Salt and Pepper
  • Brioche Buns
  • Lettuce
  • Tomato
  • Mayonnaise
  • Ketchup

Method:

  • Get your barbecue going until it reaches a heat of around 200F. Gas barbecues work fine but for all of the recipes in this guide, charcoal will give more of a smoky, authentic taste.
  • Dice the onion and chilies and mix them into the ground beef with your hands.
  • Add salt and pepper and form patties with the mix.
  • Place the patties on the grill, and cook to your desired temperature.
  • Lightly toast the brioche buns and while they are toasting, slice the tomatoes and onion.
  • Place the cheese on top of the patties for their last-minute cooking so that the cheese melts a little.
  • Prepare the burgers and add mayonnaise and ketchup to taste.

2. Brisket Burnt Ends

Brisket is the perfect barbecue meat because it is so tender when cooked right.

The burnt ends are particularly juicy because they come from the fattiest part of the brisket so there are loads of marbling that melt as the brisket cooks.

The melting fat will ensure that the brisket is super flavorful throughout as long as you cook it to the perfect temperature.

Preparation Time: 40 minutes

Ingredients:

  • 1 7 lb brisket
  • 1 tsp coarse salt
  • 1 tsp black pepper
  • BBQ rub
  • 1 cup of spicy BBQ sauce
  • brown sugar
  • 1 tbsp garlic powder

Method:

  • Get the barbecue up to a temperature of 225°F.
  • Prepare the meat brisket by separating the point and the flat where the fat separates the two pieces of meat.
  • Trim all of the excess fat so that there is just enough to melt and keep the meat juicy.
  • Rub salt and pepper onto every surface of the meat and then the BBQ rub and spicy BBQ sauce.
  • Close the lid of the barbecue and leave the brisket to cook. Smoke it until a crust has formed on top of the brisket and the temperature inside the meat is around 165°F. This will take about four hours.
  • Remove the meat from the smoker and wrap it in a foil pouch. Add stock to the pouch and wrap it up again. Put the pouch back into the smoker for around two or three hours or until the temperature reaches 195°F.
  • Remove the brisket from the smoker and put it on a cutting board. Remove the brisket from the pouch and keep the juices for later.
  • Cut the brisket into 2-inch cubes.
  • Put the brisket in a foil pan and pour the juices over the meat with extra BBQ sauce.
  • Put the pan back in the smoker one last time. Cook at 225°F with the lid closed for one more hour so that the meat absorbs the juices and caramelizes.
  • Remove the meat from the smoker and leave it to rest for 10 minutes before eating.

3. Chicken Kebabs

Preparation Time: 20 minutes

Cooking Time: 20 minutes

Ingredients:

  • 1.5 lb of skinless chicken breast
  • 1 red and 1 yellow bell pepper
  • 6 white button mushrooms
  • 1 large white onion
  • Cajun seasoning
  • BBQ sauce
  • 1 tbsp garlic powder

Method:

  • Get your barbecue heat up to 200°F.
  • Dice the chicken up into 2-inch squares and cut the vegetables and mushrooms to a similar size.
  • Skewer the pieces to make kebabs which are half chicken and half vegetables.
  • Mix the Cajun seasoning, BBQ sauce, and garlic powder and brush onto the kebabs.
  • Place the kebabs on the grill turning as needed while continuing to baste them with the sauce.
  • Cook for around twenty minutes, checking that the chicken is cooked all the way through before serving.

4. Korean Hotdogs

This special hotdog recipe will bring an Asian twist to your barbecue. The trick is to source the best kimchi for that sour tang which can really take your hotdogs to a whole new level.

  • 12 smoked hotdog wieners
  • 100g of kimchi
  • 2 large pickled onions
  • 12 hotdog buns

Method:

  • Get the barbecue hot and place the sausages on the grill, turning them occasionally until they have a nice color.
  • Slice the pickled onions and put the onions on the grill while the wieners are resting.
  • Place the hotdog buns on the grill to toast for one minute and put the hotdog ingredients together.
  • If you want to add sauce then a Korean BBQ sauce or a spicy bulgogi relish will be the perfect finish.
  • Add the kimchi on top and they are ready to serve to your hungry guests!
